Tater Tot Breakfast Casserole

The tater tot base in this recipe gives this breakfast casserole a little something extra.  I have seen many recipes floating around similar to this.  This is a spin off the one from Ree Drummond’s cookbook The New Frontier page 42.  We are using green onions instead of yellow onion here, excluding the cayenne pepper, using less peppers and changing up the cheese situation.

Let’s Get Crafty!
 
Preheat the oven to 350
 
Ingredients:
Tater tots to fill the bottom of the 9×13 baking dish (it was a little over half of a 2lb bag for us)
1 pound breakfast sausage, cooked
2 green onions, diced
4 large eggs
1 cup 2% milk
1/2 cup half and half
1/4 teaspoon seasoned salt
1 diced red pepper (we used several of the small peppers that come in a yellow, red, orange variety)
2 cups grated cheddar cheese
1 cup mozzarella cheese
The following pictures give the step by step playbook of how I layered the casserole
For this layer: Whisk the eggs, milk, half & half and seasoning salt
together and pour over the top.
One final layer of cheese.  Because… well… cheese.
Bake covered at 350 for 30 minutes
Remove the foil and bake uncovered for another 25 minutes
Yummy!  You know mine needed some green chile.  😉
