I started my blog 8 years ago just before our middle kiddo was born. As I shifted my blog to its new home, I realized that I have nearly 400 blog posts! During the transition – I went through each of them one by one to assign categories and tags. It was fun to think back and reflect. It also reminded me of a lot of recipes that I haven’t made in a while.
That got me thinking about other bloggers that do posts about “a day in the life…” I’ve decided I want to give “What did we eat for dinner this week?” a try. Here’s to our first week!
Sunday
My Mom and Dad were able to join us for dinner today and I wanted to make something easy that could also have leftovers to freeze for future meals.
I was able to run to costco and picked up a big package of ground beef that was around 6 pounds. I cooked it all up to make sloppy joes. We tripled the favorite sloppy joe recipe with a couple tweaks. Click here for the recipe. Today, I used one small can of tomato sauce and 1 can of tomato paste in place of the ketchup for the tripled recipe.
We were able to freeze two more good size portions for future meals that will be perfect to pull out and thaw on a future busy night.
Monday
My husband grilled chicken for dinner that we put over salads. I’m super bummed that I didn’t take a picture. It was really good. We hard-boiled eggs over the weekend and there is something about egg on a salad that makes it taste extra good to me.

Tuesday
We had creamy pork chops with mashed potatoes and green peas. This was a freezer meal that used extra thick pork chops from Costco. I’m realizing I don’t have this recipe posted yet. So stay tuned for that one!

Wednesday
We had queso chicken tacos. These are so easy and so good. This picture is my youngest daughter’s plate and the chicken seams to be hidden.
This is also a classic freezer/slow cooker meal taking 3 large chicken breasts, 2 tablespoons taco seasoning and rotel. When I’m making this to toss in the freezer, I usually make two at a time and do 1/2 can of rotel in each gallon size ziploc. Once fully cooked – we added 1/3 of a jar of premade queso and stirred it all together. People wanting more queso added it directly to their taco.

Thursday
We had beefy nachos at the request of my son. Dinner is the most fun when we have something where everyone gets to pick their own toppings.


Friday
Our middle daughter has been requesting making pizza with our own toppings. We got some pizza dough from the grocery store and I cooked some of my frozen tomatoes all day in the slow cooker (adding some salt and italian seasoning) to make the sauce. Yay for pizza night!


I forgot to add the cheddar cheese blend before baking so I tossed some on ours and put it back in for a few minutes.
