Halloween is almost here and our family is getting more and more excited about the coming months. This is my very favorite time of year and I love seeing our family’s excitement grow. There is something special about seeing the holidays through the eyes of your children.
Saturday
Dinner is reminiscent of one of the first meals that I made for my husband. Click here to see that post.
It is roast beef sandwiches simmered in a beef broth served over toasty bread with cheese. We mixed it up today and we’re using homemade french onion soup my husband made a while back that we froze. For tonight, I also sautéed sliced mushrooms and jalapenos to add to the party for a little extra kick of spice.
The kids were less excited about this but excited we had leftover pizza from last night and leftover double decker tacos.

Sunday
Well… we had grilled chicken again. I really like grilled chicken but didn’t take another picture of it tonight. We had salad and sprite biscuits to go with it.
If you haven’t had sprite biscuits, you need to! Click here for the sprite biscuits (huge hit in our house). They are so fluffy and amazing. This time I doubled the recipe from the get-go.

Monday
We had stew for dinner using a freezer meal stew starter with some leftover sprite biscuits. Our first stew of the season really hit the spot on this chilly day.

Tuesday
I made lasagna last month at my daughter’s request and made an extra one to freeze. That is what we had for dinner tonight. Lasagna is usually a big hit with the kids.

Wednesday
My son’s football team had a team dinner tonight and I signed up to take ham sammies. This is one his favorite dinners. We made 36 for the team and another 12 for us to have for dinner. Well… actually… I made them last night so that they could be in the fridge overnight and then cooked the next day. They are so much better when they have the night to hang out in the fridge before cooking. Here’s the link.

Thursday
This was a busy, weird day. We needed to take our littlest to the doctor this morning and didn’t have a dinner plan before we left. My husband threw in a philly cheesesteak meatball sandwiches freezer meal that is tried and true for our family. I’m realizing that we don’t have this recipe on my blog and that I didn’t take pictures. Woopsie. On the list!
Friday
This has felt like a wild and crazy week and I’m thankful for a fun weekend ahead. I met a few friends after work for appetizers and drinks. My husband ordered take-out for dinner. It’s a wrap!
