Saturday – Mummy Pizzas
We made mummy pizzas after Halloween festivities. Here’s the recipe.

Sunday – Chicken Enchilada Casserole
We had some small street size corn tortillas to use up and my husband took on the challenge in using them for dinner and made a chicken enchilada casserole. He didn’t really use a recipe per se but he started with base layers of cooked shredded chicken, corn tortillas and shredded cheese. For the sauce he combined leftover queso, cream cheese and rotel. These were really good. It feels like a win when we both are excited to have leftovers for lunch the next day.

Monday – Chili
I remember having chili on Halloween many times growing up and it felt like a warm cozy meal to snuggle up to before going out to go trick or treating. (Yay for stew and soup season!)
Of course I’m taking help from our slow cooker today. Before work I tossed in – frozen cooked hamburger and diced onion with a package of chili mix and a couple packages of frozen tomatoes. To finish it up when we get home – I tossed in a big can of chili beans. I like to do that at the end so the texture of the bean holds up and doesn’t feel mushy from cooking all day.


Tuesday – Pita Pizzas
A hidden gem at Costco are packages of 10 or 12 pitas. They are perfect for pita pizzas that can be topped in so many ways. It is a quick way to throw together a quick meal. Sometimes the kids are “all in” with throwing on their toppings but today they were running in different directions and I tossed theirs on. For our toppings – I pulled some precooked sausage out of the freezer. We also had some pepperoni on hand. I wished we had mushrooms but was able to power through without them. Wednesday – Chicken Garlic Pasta
Today was a travel day for a work conference. There was a reception in the evening for the group to get together before the conference began. My picture below doesn’t do them justice but they served excellent barbacoa street tacos with pineapple salsa along with a red salsa.

At home my husband made chicken garlic pasta. This is a hearty, comfort food meal that starts out in the crockpot with just a few ingredients. Once that is fully cooked, you add cooked pasta and cheese to the party and it’s ready to go. Thank you to my husband for sending me a picture of his plate. ❤

Thursday – Yummy Food at the Conference
I’m still out of town and wanted to share a couple great meals we had at the conference. This first picture is from lunch. There is something special about a cream sauce with pasta that incorporates sun dried tomatoes that makes my heart happy.

This next picture is what we had for dinner at the end of a day full of conference sessions in a group event outing. Great food and great company make for a great evening.

Friday – Home Sweet Home
The kids had leftover pizza and my husband made taquito enchiladas for dinner using red enchilada sauce. Here’s a quick link to the recipe using green enchilada sauce.
