What did we eat for dinner this week? 11.12.22

This was a tasty week! We’ve been leaning pretty hard on our freezer meal stash and it helps make dinnertime so much easier during this busy time of year.

Sunday – Football Snacks

We had mostly snacks and other leftovers we had on hand while off and on watching football. My favorite was the loaded baked potato dip. So good! Click here for the recipe.

Monday – Philly Meatball Sliders

Frozen meatballs have turned into a family favorite. There are so many different variations of them. This is a recipe that I need to type up and post. Stay tuned! It works great to toss in the slow cooker for a half a day or pull it all together as a freezer meal and save it for another day. We had a few Hawaiian rolls to eat up so that is how I had mine. We also had larger rolls that work great too.

Tuesday – Cheeseburger Soup

As it gets colder, I’m so excited to eat more soup. Usually, I use ground hamburger for cheeseburger soup but I wanted to get it thrown in the crockpot and didn’t have any pre-cooked frozen hamburger on hand. We did have cooked ground sausage and I decided to give it a go. It was really good. Click here for a recipe that I really love. I did it in the slow cooker on this day and shifted a few ingredients – so look for a new post soon. It was SO easy and proves to me why I love to keep frozen pre-cooked ground meat on hand.

Wednesday – Smothered Pork Chops

I made these smothered pork chops on the same day that I made the salisbury steak frozen meals we recently had. Click here for the recipe that I just got posted. These were good but took much longer to cook than anticipated. I want to try them again and tweak a few things before sharing this recipe.

Thursday – Spaghetti

The kids get super excited when spaghetti is for dinner. I recently made a large batch of spaghetti sauce to freeze in smaller batches. Click here for the recipe. This is using one of those up. It included cooked ground sausage and pepperoni slices. Costco has large packs of pepperoni that freeze great and add a little something extra to a spaghetti dinner.

Friday – Smothered Bean and Beef Chimis

This has felt like a super busy week with lots of twists and turns. This was a comforting and delicious way to head into the weekend. My husband and I add green chile to ours and the kids have their burrito toasted but with no green chile.
