This is a recipe my husband’s Mom shared with us. He has called her several times when he makes it and we wrote it down last time with some notes so we can have it handy. The kids love this dinner and it feels even more special being a family recipe! On this day – we made it an a special Sunday dinner for our littlest kiddo’s birthday.

Let’s Get Crafty!
Ingredients: Broken into two categories (1) cooking chicken and making broth (2) noodles
Put the following ingredients in the slow cooker in the morning so the chicken has most of the day to cook and create the tasty homemade chicken broth that will be used to cook the noodles:
1 whole chicken
3 celery stocks, chopped in large pieces
2 cups carrots, chopped in larger pieces or kept whole if they are baby carrots
1 large onion, chopped in large pieces
1 bay leaf
Water to mostly cover the chicken (you’ll want to leave an inch or so of room at the top of the crockpot)
Combine the noodle ingredients well and dump on a clean counter with extra flour spread out. Add a little more flour until it reaches a consistency that can can be easily flattened with a rolling pin:
2 cups flour (more as needed)
1 teaspoon salt
1/4 cup half and half
4 eggs
Once the noodles have been flattened with a rolling pin – use a pizza cutter to cut the noodles. Once cut, they will need to dry some so they can hold up to the cooking process. Ours set out for around an hour.

While the noodles are drying, you can pull the chicken out of the slow cooker and sort out the chicken from the bones to be added back to the broth later.
Strain the carrots, celery and onion from the chicken broth and remove the bay leaf. The chicken stock is then ready to go into the instant pot.
When the noodles are ready, slowly lower them into the instant pot so they stay separated when cooking. Our daughter lowers one at a time and my husband did 3 at a time.

We’ve found that 22 minutes on the manual setting is perfect for us. (We did this in two batches.) Once the noodles are done cooking, be sure to remove them from the broth so they stop cooking.

The chicken can then be added back to the broth used to cook the chicken and then later cook the noodles. It will have a little thicker consistency now from the flour on the noodles.

To plate – put your noodles in the bowl first and add some chicken along with the amount of broth your heart desires. I like a lot of broth and my husband likes his to be mostly chicken and noodles.
