What did we eat for dinner this week? 11.26.22

Thanksgiving is my very favorite holiday. It’s a time for reflecting over the past year while preparing and eating delicious food. Of course that is my favorite meal of the week!

Sunday – Philly Cheesesteak Stuffed French Bread

We have antelope hamburger to use up and this was a perfect dinner to thaw the meat during the day and cook it up later. The usual philly cheesesteak suspects are included in this recipe similar to the philly meatball sliders recipe that can be found here. Be on the lookout for this official recipe to be posted soon.

Monday – Taco Crunch Wraps

It was taco Tuesday early in our house with this spin for dinner. The kids were less excited about these today than I thought they would be. It feels like double decker taco meets crunchy burrito.

Tuesday – Beef Roast

Nothing says fall and winter to me like a roast cooking all day in the slow cooker. This was a frozen roast that I bought on sale and froze with a little beef stock because I didn’t yet have a plan for how I wanted to use it.

To make life super easy today – I threw the roast in the crockpot by itself with a packet of stew mix on the top and let that simmer alone for the morning and then added chopped potatoes to cook with it for the afternoon.

Wednesday – Pizza Night

Yay for delivery and limited dishes.

Thursday – Thanksgiving is here!

Friday – Beef and Dumplings

This is a spin on a chicken and dumpling recipe that I love using the instant pot to cook the dumplings. We used leftover roast and potatoes from the other night. Next time I would take out the potatoes and add more veggies like the trio of onions, carrots and celery like the classic chicken and dumpling recipe. Saturday – Pizza Night… again.

I let the girls pick what we had for dinner with Dad and Connor out of town elk hunting and you guessed it – pizza again. Rather than ordering out this time we made an easy pizza at home using a store bought pizza dough mix.
