Slow Cooker Cheeseburger Soup

This recipe is perfect for a chilly fall or winter day. It comes together really quickly and smells great while it cooks all day long. This was a comforting, satisfying meal with a few less calories not using milk and butter

Let’s Get Crafty!

Ingredients:

1 lb ground beef or sausage, browned

2 cups carrots, chopped

1 cup celery, chopped

4 potatoes, diced large

1 small onion, diced

6 cups chicken stock (We used ground sausage so I did chicken stock. Beef stock is great when making with ground beef.)

12 oz. Velvetta, diced

Optional toppings: cheddar cheese, bacon crumbles, french fried onions or jalapenos

Add everything to the slow cooker except the velvetta that will be added towards the end of the cooking process and the optional toppings for when you are ready to serve.

Cook on low 6-7 hours until the potatoes are cooked through

Add Velvetta to the party in the last 30 minutes of cooking or so to melt and combine
