It has been a busy start to the new year for our family and it felt like we were able to get back into the swing of things a little more this week.
Sunday – Beef Ragu with Rigatoni Pasta

I’ve been wanting to make a Beef Ragu for a long time. Mostly because I bought some polenta at Trader Joes a while back at a weak moment and it has been sitting in the pantry staring at me every time I go in. In the end, the polenta didn’t shake out like I hoped. The Ragu was great on pasta.

Monday – Buffalo Chicken Wraps

Tried and true – one of my favorites. The kids don’t love this one so I like to make it when I know they have another option to have that I know they will like. My husband and I had these wraps and the kids had more of the Beef Ragu from last night. I always love to add a little more wing sauce to mine before wrapping it up.
Tuesday – Pizza Night

Yay for pizza night! Not because I love pizza but because it makes the kids happy. 🙂
My husband made these tonight while I was working and the house smelled great when I walked in. On one he added sausage because he believes sausage is amazing and should be put on everything. On the other he added leftover chicken from last night with a buffalo sauce instead of traditional sauce. I had the buffalo chicken one and it was great.

Wednesday – Chili

This took all of three minutes to toss together before leaving for work in the morning. I used one of the precooked frozen ground beef packets and added diced onion, tomatoes, chili beans and chili seasonings. What was weird was throwing away a couple cans of chili beans from the Great Value brand. They were just off – it was weird. We haven’t had that issue before. Luckily, we had a couple extra in our pantry.
Thursday – Baked Pork Chops

This was a freezer meal that we have had hanging out in the freezer for a bit in a foil pan and I was ready to use it up and get that freezer space back. Baking dinner in foil pans can be tricky when the meal hasn’t had the time to fully thaw. We planned ahead this time because last time it took FOREVER to be fully cooked.
It’s super early in our house on Friday morning as I sit and type what we have eaten so far this week. Our puppy dog Pongo is sitting here with me. I think he’s comfy because he is lightly snoring and snuggled next to me. I’m not quite sure how almost an hour has gone by – I hear our littlest starting to stir. She’ll be walking out of her room anytime now.
Friday – Buffalo Wild Wings
We ordered Buffalo Wild Wings for dinner and it ended up being a hoopla and a reminder why we cook at home so much of the time.
