Monday – Chicken Fajita Wraps


I toasted mine in the air fryer and added some cheese sauce to it that we made the night before.

Tuesday – Chicken Thighs


Our local grocery store had a good deal on chicken thighs so I bought a package and let them thaw in the refrigerator. My husband grilled them tonight but they are also really good baked or in the air fryer.

Wednesday – Pork Carnitas


I think my husband has been craving carnitas since we made them with the beef bones a couple weeks back and today was the day. Here’s the link to an easy cooking process for them. We did them a little different on this snowy day because the pork wasn’t in the slow cooker first thing. We did 120 minutes on manual in the instant pot and then another 30 minutes. Then we followed baking for the 275 degrees for 45 minutes to help them crisp up.

ThursdayCorn and Ham Chowder


This was a tasty soup at the end of a cold, winter day. I’ve been feeling under the weather and soup is such a comforting meal.

Friday

My husband grilled seasoned pork loin for dinner and it was really good. So good that I even forgot to take a picture.
