If you’re looking for a hearty winter meal that makes you feel all warm and cozy inside, here’s a good one to give a try. This is a recipe I haven’t made in a very long time. It’s a spin on a recipe from a cookbook from Pampered Chef that I made years ago when I was in my early 20s. So it has been a little bit. 😉

Let’s Get Crafty!
Ingredients:
2 lbs stew meat
1 teaspoon ground cumin
1 teaspoon oregano leaves
1 teaspoon chili powder
1 teaspoon garlic powder
1 onion, diced
1 can beef broth
1 cup carrots, rough chopped
1 large bell pepper, sliced
1 can tomato paste, 6 oz
1 can 14 1/2 oz of fire roasted tomatoes
Add the stew meat, spices (next four ingredients), diced onions and beef broth to the crockpot and cook on high for 3 hours. I was starting this a little later in the day than I anticipated so I wanted to cook it on high some to give the cook a jumpstart.

Then add the rest of the ingredients to the slow cooker to simmer away on low until dinner time (which was another 4 hours for us.)
