Time especially gets away from me the first few months of the year, but I didn’t want to let too much time go by before I shared some fun food pictures from this week. I hope you love looking at (and eating) food as much as I do.
Saturday – BACON!

Enough said really. 🙂 I think of this dinner as our late Valentine meal. My husband knows the way to my heart includes bacon and green chile. Timing-wise this was the 18th of February… so still pretty close to Valentine’s Day. We were having bacon wrapped asparagus, bacon and green chile wrapped antelope loin and instant pot mac and cheese.

Monday – Low Carb Cheeseburger Casserole


Funny story… when I decided to change blog platforms… this was one of the recipes that I came across and knew that I wanted to make again soon. It ended up taking me about 5 months but I’m glad it came to be. Click here for the original recipe. I realized last minute tonight that we didn’t have any cream cheese so I used garlic and herb laughing cow triangles and it worked out just great.
Tuesday – Cheesy Hamburger Pasta

This is a favorite for the kids so that is why I make it. It’s fine… actually good but I’m “meh” about it.
Wednesday – Fish Tacos


It seems crazy that it is already Ash Wednesday! We baked up some everything bagel seasoned fish from Costco and made fish tacos with it. My husband put together a sauce to add to the party. When I walked into the kitchen and saw all the seasonings on the counter… I did a double take. It turned out pretty good after helping it wind down with extra sour cream. I’m not sure he could even tell you what the measurements were… risky indeed but ultimately tasty.
Thursday – Beef Stew

Funny story about this stew… my husband and I had a rare morning of drinking coffee and talking before the kids were up. We talked about how it was Ash Wednesday (this was a discussion the morning before…) and talked about tuna sandwiches for lunch using the boiled eggs we already made.
Flash forward to him leaving for work and me putting a beef stew in the crockpot for dinner. We ended up cooking it all day and then keeping it cold overnight to reheat and have this night – Thursday. It was really good. Stew is one of those things that is always great as leftovers too, so it worked out wonderfully.
Friday – Shrimp, Tater Tots and Salad
