What did we eat for dinner this week? 03.11.23

There were several meat section items on sale at Costco and we took advantage of them. I realized when I was unloading at home that I overestimated what I could get done with freezer meals on Sunday and ended up needing to take an evening during the week to get them all done. They are done now and there are easy dinners in our future! Stay tuned for a separate post on that.


Sunday – Carnitas after the power came back on


One of the things on sale at Costco was a pork butt. Mark had the idea to make carnitas with it and then the power went off and was off almost three hours. The kids got hungry and ended up having things we could easily grab from the pantry and Mark and I waited until the power came on to cook. It was really good!

Click here for a great carnitas recipe that initially cooks in the crockpot and then uses the oven to crisp them up. We followed suit with this recipe and cooked them stovetop and then took help from the oven to crisp them up. Here is a picture of them hot from the oven.



Monday – Buffalo Chicken Wraps


This is one of my favorites. It checks all the boxes for me… tasty, easy and buffalo wing sauce. I wish my family was more excited about this one.


Tuesday -Taco Sloppy Joes


This dinner took me back to when I worked at Taco Johns during high school. We had taco burgers on the menu and used a steamer to steam the buns each time there was an order and it would make them so warm and soft. The bun made the taco burger.

No steamer in our house tonight but it was fun to think about.


Wednesday – Shrimp and Crab Cakes with Macaroni and Cheese


Today was a birthday dinner for the 15 year old in our house and this was his request. He loves seafood. Click here for the crab cake recipe that I used. The picture above is the plate he made himself.


Thursday – French Dip Sandwiches

We made some french onion soup in the fall and froze it. This meal is using up the last of one of those. Click here for a similar recipe that is the general gist of the meal.


Friday – Shrimp Tacos


This dinner took more work and dishes than anticipated… or maybe I have been really enjoying not having to dirty up a ton of dishes and dinners coming together pretty quickly. Or maybe it is having a tired family at the end of a long week.

The shrimp was really good and I put it on my soft taco last so that you could see it easier in the picture. 🙂 The picture from the carnitas hides the star of the show so I was glad to have grabbed a picture of them coming out hot from the oven.
