Freezer Meals – March 2023

As many of you know… freezer meals are near and dear to my heart. They are especially helpful at different times of life when making dinner just doesn’t get our focus yet we want to eat something tasty. When our kids were small and especially now as they grow, freezer meals are wonderful to have on hand to make the evenings easier.

Here’s the rundown for this session. I was able to sneak away with my middle kiddo and we did a Costco run. I had a couple freezer meal ideas on my radar but expanded them when I saw a couple meat sales that I wanted to take advantage of.

Let’s Get Crafty!

Here’s the rundown of what I purchased and what I made:

1 package of ground hamburger (approx. 7lb)
– 2 salisbury steak dinners (10 patties each) (bake)
– The rest was cooked to have frozen precooked hamburger on sale (bake or slow cooker)

1 large package of pork chops (each one was cut in 3 to help with cooking time later) (approx. 6 lbs)
– 1 smothered pork chop dinner (bake)
– 3 ranch pork chop dinners (bake)

2 packages of boneless chicken breasts (approx. 18lb)
– 2 chicken taquitos (slow cooker)
– 2 mississippi chickens (slow cooker)
– 2 buffalo chicken wraps (slow cooker)
– 2 chicken pita pizzas using sweet chili sauce (slow cooker)
– We had several chicken breasts left that I froze uncooked

1 package of boneless chicken thighs
– These all went into the freezer “as is”

1 package of seasoned chicken legs
– Separated into 2 galloon freezer bags for two meals (grill)

2 rolls of ground sausage (3lbs per roll)
– 2 freezer packets for sausage pita pizzas with precooked sausage
– 3 spaghetti sauce with precooked sausage (slow cooker)
– The remaining was split up between freezer bags to have precooked sausage on hand

1 package of stew meat (approx. 7 lbs)
– 3 mongolian beef freezer meals

1 boneless pork butt (approx. 6 lbs)
– Carnitas that we had for dinner on 03.05.23
– The rest was divided up between 3 packages to freeze for later green chile sessions


If you are interested in freezer cooking… here are some handy things to have on hand:
Freezer bag holders. I thought these were silly when I first started freezer cooking and have found them so helpful over the last few years.
Gallon size freezer bags. I highly recommend using ziploc freezer bags. We have tried different brands and I tend to run into leaking issues.
Freezer soup containers. We tend to use mostly freezer bags and aluminum foil pans for freezer meals but these soup containers also come in handy, if you have the freezer space to store them.
Reusable freezer bags. There are silicon reusable freezer bags that I’ve seen people using and I’m curious about but haven’t tried yet.

1 package of ground hamburger (approx 7lb)

– 2 salisbury steak dinners (10 patties each) (bake)


1 large package of pork chops (each one was cut into 3 to help with cooking time) (approx 6 lbs)

– 1 smothered pork chop dinner (bake). Single layer of pork chops at the bottom of the foil pan and cover with the following mixture: 1 can cream of mushroom soup, 1/2 packet onion soup mix and splash of 1/2 and 1/2

– 3 ranch pork chop dinners (bake). First dip each pork chop into whisked eggs with a splash of milk and then into a combination of panko bread crumbs, italian bread crumbs and ranch dressing mix. These thaw great if you put them in the freezer the night before and bake the next evening



2 packages of boneless chicken breasts (approx. 18lb)

– 2 chicken taquitos (slow cooker). Chicken, salsa with a little bit of chicken broth cooked on low in the crockpot. Then add some cream cheese and follow these air fryer directions for crispy goodness.

– 2 mississippi chicken (slow cooker). This is using the idea of the mississippi roast recipe with chicken. So good!

– 2 buffalo chicken wraps (slow cooker)

– 2 chicken pita pizzas using sweet chili sauce and some soy sauce (slow cooker)


2 rolls of ground sausage (3lbs per roll)

– 2 freezer packets for sausage pita pizzas with precooked sausage. The packets include the pita bread, fully cooked ground sausage and pizza sauce

– 3 spaghetti sauce with precooked sausage (slow cooker). The recipe was similar to this and broken up between 3 freezer bags. These will cook on low in the crockpot the day of the meal.


1 package of stew meat (approx. 7 lbs)

– 3 mongolian beef freezer meals. This is usually a crowd pleaser with the kids. I bought some broccoli to steam along side it.
