What did we eat for dinner this week? 03.18.23

March is flying by and there are days when springtime feels like it’s in the air. This seems like a great time to pull out a few cookbooks and be thinking about springtime meals. (I’m secretly hoping there are a couple cold days in our near future for soup dinners before we are in the full swing of spring.)



SundayEnchilada Stacks


This meal was a couple days in the making. We cooked the rest of our soup bones from December when we bought the prime rib roasts on sale before Christmas. This dinner idea was prompted by needing more freezer space with all the freezer meals that I made the weekend/week before.


The girls have been wanting pizza and REALLY wanted it tonight, so they had little pita pizzas for dinner with sausage. It worked out great because we had two pitas in the fridge to use that were leftover from the freezer meal session last weekend and some precooked sausage. Quick meal and happiness all around.



Monday – Plan B


So… during the day our power went off, so the slow cooker turned off and dinner was a bust. The girls had leftover mac and cheese with hotdogs and blackberries. I had some steamed chicken and veggie dumplings from Costco that I have been excited to try and really liked them.



Tuesday – Mongolian Beef (Take 2)


Mongolian beef didn’t work out yesterday but it did today and it was a big hit! The oldest even wanted to take leftovers to school for lunch. #winning



WednesdayTexas Ranch Chicken Casserole


I cooked one of the chicken fajita wraps meals in the crockpot during the day while home with a sick kiddo and then used this recipe for Texas Ranch Chicken Casserole to make dinner using the veggies and cooked meat. My oldest daughter made fruit salad to go with dinner.

My husband and Father-in-Law made it home this evening from a pool tournament and they liked it too! #winningtwodaysinarow #myheartishappywhenmyfamilyishappy



Thursday – Beef Stew


This was a perfect, cozy dinner on a cold, windy day. My husband was home with our little one today and used this stew recipe to toss dinner together (in the slow cooker instead of the instant pot.)



Friday – Shrimp and Fish with Red Potato Fries


Our Lenten dinners are pretty predictable. I’m not a big fan of fish but the kids and my husband had some of the everything bagel seasoning fish from Costco too.
