Time flies when you’re having fun. April was a busy month, for sure, with highlights of fun times and memories made. I took a lot of pictures of food because that comes naturally but I know that I’m feeling mentally spent when I don’t spend down time writing about food. With some focused rest, it feels like I’m getting more and more back to my food writing self.
Chicken and Rice Soup

We haven’t had this in forever and I forgot how much I loved it. Here’s a link to the recipe. The kids are eating up meals with rice these days, so it seemed like a good time to make another soup while we are still having some cold days sprinkled in.
Chili with Stew Meat

It was a snowy, windy day that was perfect for another chili before springtime is officially here. It smelled tasty simmering away in the slow cooker all day. We ended up with a lot leftover from this so I made small quart size freezer bags of it to warm up for me on days where I’m working from home. It is so easy to throw into the small crockpot and have ready at lunchtime with literally no effort. It is my favorite when meals can pay themselves forward.
Tuesday – Chicken and Noodle Soup

The oldest wasn’t feeling good so I threw together some chicken noodle soup in the instant pot and it hit the spot.

Salisbury Steak

This tastes soooo much better than it looks. This is from a freezer session that I did at the beginning of March. We froze them in foil pans that were able to go straight to the oven.
Easter Dinner
Prime rib with slow cooked mushrooms and horseradish, cheesy potatoes, deviled eggs and sautéed green beans. Yum! We also made an Easter Bunny veggie tray using a spinach bread bowl. So cute and fun. This was a family team effort! A couple items not showing in the picture are the homemade rolls from my Mother-in-Law along with the coconut cream pie that was melt in your mouth delicious.

This cute little bunny makes me think about several years ago making a turkey meat and cheese tray on Thanksgiving with my nieces. ❤
