Part 2 of what we ate in April because I ran out of time and mojo when writing out part 1 over the weekend. I’m skipping dinners that are frequent repeats that our family loves because you have seen those before and trying to share a few more meal ideas to add to your meal idea stash.
Chicken and Veggie Stir-Fry

I’ve been wanting to make a stir-fry for a while and today was finally the day. The kids were able to get on board with the sauce and when you add crunchy noodles on top it just makes everything better.
Chili Dogs

We simmered chili in the crockpot all day and used it to make chili dogs. These were so good and feels like a way for me to keep having my favorite (chili) while making it look a little different for those that get sick of it by itself.
Bacon and Egg Sandwich on Toasted Bread

My husband made this for breakfast one morning and it was quite amazing.
Costco Hotdog

So… fun fact about me. I can spend a lot of money at Costco and then get their hotdog and drink combo for $1.50 and feel like I’m leaving a winner. Even better this time because I remembered to go slow with the relish that doesn’t want to come out. If you go too fast – boom! It all comes out in a hurry and ruins a good thing. Not this day Costco! On this day – I win!
Pork Tostadas

I can’t remember the last time I had a tostada but I can tell you these were amazing. We made pork carnitas and instant pot mexican rice as the side.
Chicken Cordon Blue Casserole

This was from a freezer meal. We also cooked elbow macaroni that I stirred some of it with for the kids and they both really liked it and even went back for seconds. Here’s the recipe.
