What did we eat for dinner this week? 05.06.23

May is here! My Mom’s Birthday starts off the month. ❤

Hard to believe another school year is almost in the books and summertime is quickly approaching.

(The featured image this week is my son’s favorite snack these days and I was finally able to sneak a picture. He made it up himself and seems to love it.)



Sunday – Grilled Pork Loin, Bacon Wrapped Asparagus and Salad

I know I’ve said this several times already… but Yay for grilling season! I love when dinner doesn’t make a lot of dishes.


This is the current favorite nighttime snack for a 15 year old that works out most days of the week and is just looking to eat more calories. Awww…. to be 15. He warms up eggo waffles then adds peanut butter and sprinkles with some chocolate chips.



MondayRamen and Veggies

We’re getting back in the swimming lessons groove and didn’t plan ahead for dinner tonight. The kids were more than thrilled to have ramen for dinner and were talked into some veggies on the side.



Tuesday – Ordered In

We ordered in tonight. Somehow I’m running into more and more Tuesdays that feel like the end of the week and not the beginning of it. 😀



Wednesday – Mississippi Chicken Sandwiches

I LOVE these on crispy toasty bread and always add a bunch of extra sliced pepperoncini.



Thursday – Green Chile Burritos

My husband grabbed some green chile from a place we both love and we made green chile burritos. The kids did burritos without the green chile on top and asked me not to put jalapenos in the burritos next time. I tried explaining that it was just diced green pepper and each of them looked at me skeptically.



Friday – Cheesy Artichoke Dip

I got to be home alone working on crafting projects in celebration of National Scrapbooking Day on Saturday. In the evening I did scenic layouts and then the next day I did fun colorful layouts. Click here if you want to order them. You get a good deal if you order all 5.
