What did we eat (and do) while camping? Part 2 – June 2023

Wednesday – June 7th

My husband, son, nephew and I went to Colter Bay in the morning to see about a part to fix some water shenanigans in the camper – no luck.  Afterwards my husband, Dad and littlest went to Jackson in hunt for what we needed and My Mom, son, middle kiddo and nephew went to Grant Village.  We were sad to see that it was closed. This was one of those times where having a bag with different snack options really came in handy.  

My Husband’s parents made it to the campsite this afternoon. It’s a blessing they were able to come for a few days too. It was neat for the kids to have both sets of grandparents together on holiday.


Dinner with my parents and my husband’s parents was a peppercorn pork loin and a mushroom pork loin with fried potatoes from my Mom and pasta salad from my Mother-in-Law.  My husband cooked them in foil over the fire.  Everyone loved everything!



Thursday – June 8th

My parents headed off this morning after sneaking in some more fishing and some quick group pictures.

Today was a busy and fun day going up through Yellowstone with my husband’s parents. Our middle kiddo rode with them most of the day and I think she was excited to have a bit of a break from us.

At Tower Junction we followed along the Lamar River to the spots where we saw a lot of bison and a couple bears when we came in 2019. It was a beautiful drive.

Everyone was hungry when we got back and my mother-in-law made sloppy joes for dinner that were super tasty along with potato salad, guacamole and baked beans (the chips are hiding the beans in the picture.) It was a delicious meal!



Friday – June 9th

We headed out to Jenny Lake in the morning after stopping by Colter Bay for one of their tasty lattes. The clouds were very low this morning so the Tetons were covered up quite a bit when we first got there but it made for cool pictures as the clouds were lifting while we did a short hike around part of the lake.



After this we headed to a pizzeria called Leek’s Restaurant. The pizza was delicious! I had a good feeling when we pulled up at 11:45 and there were people waiting because it didn’t open until noon. It was right on the main road heading back to camp from Jenny Lake just after Colter Bay. Remember how I mentioned highs and lows? Well… the girls were not patient with the hour wait to get the pizza and my patience was also melting away as we were all “hangry” but we made it through and got to eat some really good pizza.

After lunch we headed to the Jackson Lake Lodge to look around. My Grandpa considered this a “must see” and the views are absolutely stunning.



Our last dinner in the Tetons was amazing! Thank you to my Father-in-Law for pulled pork sandwiches and jalapeno poppers. We also had potato salad and a cheesy campfire dip (recipe coming.)
