What did we eat for dinner this week? 07.15.23

Swimming lessons started up again this week for the girls and my son had a goat show over the weekend. Yep. Summer is in full swing.



Sunday – Grilled Chicken Wings for Dinner

This dinner makes me excited for football season just down the road! Side note… does anyone else believe that crinkle cut carrots taste the best?



Monday – Mongolian Beef and the Poor Man’s Rice Pudding

This family favorite usually has the kids excited for dinner. Our littlest and I are generally the only ones that eat the broccoli but tonight my husband decided he would too . The poor man’s rice pudding is something that my dad would make us when we were little and we had leftover rice at dinner. I remember my brothers and I being excited for it so it’s fun to watch my kids feel the same way. Sooo easy… leftover rice with some milk, sugar and cinnamon.



Tuesday – Grilled Sausage and Jalapenos with Sautéed Mushrooms and Onions



WednesdayDouble Decker Tacos

I’m absolutely LOVING this street corn dip from Costco. It is delicious with Veggies warm or cold. I bought it when it was on sale and love it so much that on my last trip… I had to but it again. Even at full price. Had to be done.

The other plate is my daughter’s watermelon plate. She leaves none behind!



Thursday – Looking back and not sure!

Maybe pizza? Maybe leftovers? Not sure. One thing I am sure of is that we ate because I don’t skip dinner. “Ever. Even if there’s a fire!” (Name the movie?)



Friday – Taquitos

I mashed up an avocado and topped it with our salsa for dipping pleasure and it was amazing. My husband was out of town with the girls so it was our oldest and me home alone for some one on one time tonight. We watched a movie and I was informed that I pause movies too much. Who knew?! 😀

My son made a bowl of ice cream complete with sprinkles.
