What did we eat for dinner this week? 07.22.23

Mark and I headed out of town at the end of this week so the start of the week was craziness trying to get “all the things” done and situated before heading out of town. I didn’t really have dinner planned for each of the days before we left. It was an adventure.




MondayFish Sticks

The fish sticks from Costco are great and the kids requested them tonight after swimming lessons. I didn’t have anything else planned so it was easily done.



TuesdayChicken Pasta and Veggies


I didn’t plan anything for dinner again and remembered that I had bought a chicken pasta kit on sale when Costco had a tasting station a while back. Pretty good… nothing great. I added siracha to mine to kick up the heat level.



WednesdayTaco Stuffed Peppers


The kids used the taco meat to make double decker tacos (their favorite) and I put some taco meat on top of peppers to bake for my husband and I. I was missing the avocado and olives this time but still very good.



Thursday – AND WE’RE OFF!

My husband and I flew to Pheonix today for a weekend of fun with my sister-in-law and brother-in-law to meet friends and stay at their house. They have the most amazing pool! We had a wonderful time and delicious food!

There were some flight delay shenanigans that provided us with an opportunity to test out some airport eats. This jalapeno and cheese stuffed pretzel was really good! They served it with queso and stone ground mustard. I especially liked the mustard.


We also had plenty of time to grab dinner before the flight and I had a truffle mushroom burger with sweet potato tots. Both were very tasty!



Friday – So Many Wonderful Things!

This was a wonderful day of relaxing and hanging out by the pool. The low for the day was 90 degrees so sitting in the pool under the umbrella with an icy cold beverage was the ticket.

We had the most delicious goat cheese stuffed bites from the air fryer that we just can’t seem to find at home! I will not give up the search! I need them in my life.


For lunch we had chicken salad
with veggies


The guys grilled carne asada for dinner and we had the most amazing street corn along side it. The tortillas were homemade and toasted on the grill. Perfect dinner in my books!


If you’re looking for a fun treat, they bought these little chocolate chip cookies at trader joes that were super tasty and looked super cute in their glass container.
