What did we eat for dinner this week? 08.05.23

MondayCheesy Sausage Pasta

Tuesday – Puffy Tacos for Taco Tuesday


I wanted to do taco Tuesday with a twist. I envisioned putting fajita sized flour soft shells in the air fryer and having something of a flour soft shell tostada rather than a corn tostada. They didn’t stay flat like I was anticipating but they were very good and added a nice layer of crunch.



Wednesday – Pizza and Packing

Swimming lessons wrapped up and both girls are excited they made it to their next levels. Tonight was a perfect night for ordering pizza in while I packed/did laundry to head out tomorrow for a work retreat.



ThursdayLunch was a Burger with Roasted Jalapenos and Dinner was a Patty Melt with Roasted Jalapenos


The salad was wonderful with their homemade ranch dressing. It included not only shredded carrots but sunflower seeds and dried cranberries. So good! I’m going to need to incorporate this more into my life.


A couple friends had patty melts for lunch and they looked so tasty that I wanted to have it for dinner. So good! I’m not sure if I have ever had a patty melt before but I know that I will again.

My friend’s dinner looked too pretty not to take a picture. She got a steak with mashed potatoes and greens.



FridayFish Tacos for Lunch and Beef Street Tacos without Red Onion for Dinner

The restaurant at the lodge opened up today and we were able to take our lunch break there and eat dinner there. Both were pretty tasty. My favorite might have been the homemade chips along side guacamole and pico.
