Ready or not… a new school year is upon us! I haven’t been able to sneak in a freezer meal session yet and hoping to do that at some point over the next month or so. That always helps me a ton during the school year.
(I wrote this last weekend before school started and didn’t have a chance to get the pictures added until now. Time flies when you’re having fun!)
Sunday – Grilled Pork Loin, Zucchini and Jalapenos along with Air Fried Okra



A dinner made in heaven is what this was. Our garden is in full force with zucchini and they are so good when they are grilled. We found some frozen okra from my mother-in-law in the freezer and wanted to toss it in the air fryer. It was very tasty. I love it when it gets nice and crispy and it feels like a win without frying it in oil.
Monday – Taquitos and Green Chili

We are one kiddo light this week with her spending the week with my husband’s parents to help us bridge the gap between her summer program ending and school not yet starting. It sounds like they are having a blast and I’m still in my phase of not really planning dinner ahead so I came home and opened the freezer.
The oldest and youngest didn’t want taquitos and wanted frozen pizza so everyone got what they wanted. The green chili is from a local restaurant my husband and I love. Before jumping into making fresh freezer meals to help with the school year, I’m trying to go through and use up what we have stashed in the freezer already. This green chili was a special find. 🙂
Tuesday – Jalapeno Popper Sausages with Grilled Zucchini and Jalapenos

This is a dinner (to me) that can NEVER go wrong. I love it. The sausage is perfect dipped into mustard. Have any of you seen the current craze about dipping things into mustard and cottage cheese? I thought about it on this night and then went… nah. I’m doing it how I know I love it.
The jalapeno was super hot! It makes me excited to see how the chiles are this year for salsa making.
Wednesday – Philly Cheesesteak(ish) Sandwiches with leftover Grilled Zucchini

We had some frozen sliced beef in our main freezer that I noticed when I saw the green chili the other day and decided to throw together a quick meal before running out the door for kiddo drop offs and heading to work. It was so good. Stay tuned for another post because I loved it so much that I’ll want to be able to easily pop back to it.
The best part of the meal was that my littlest and I made peach cobbler to go with dinner. It was so good! Yay for it being yummy peach season!
Thursday – Grilled Ribs and Bacon Wrapped Asparagus

Alongside some more grilled zucchini. Yes, more. Zucchini is growing out of our ears at this point. We go on nightly “Zucchini Hunts” and keep finding more almost every day.
