Peach Cobbler

The peaches have arrived! In anticipation… I have been looking at peach cobbler recipes. We did a peach crisp last year that was really good and this year a peach cobbler sounds like just the ticket. Our littlest kiddo was so excited for peaches that she ate one while we made the peach cobbler.

The recipe below is a mis-mash of recipes that I saw with a couple things I wanted to throw in. Turned out really good!

We didn’t have any vanilla ice cream on hand, so we promptly added it to the grocery list. We did have a box of ice cream sandwiches. I tried cutting off the cookie part to leave the vanilla ice cream but it didn’t work out.


Let’s Get Crafty!

Ingredients:
2 cups bisquick
1/2 teaspoon cinnamon
2 cups 2% milk
1/3 cup vegetable oil
Pinch of nutmeg
1 teaspoon vanilla
8 sliced fresh peaches
3/4 cup sugar
1/3 cup strawberry juice

Preheat oven to 375 degrees

Mix everything together except the last three ingredients and pour into a baking dish that was prepared with pam.

Gently stir together the peaches, sugar and strawberry juice and spread the slices on top of the bisquick combination.


Bake at 370 for 45 minutes. We checked ours and needed to add 5 minutes and then 5 minutes again to help the top brown up just a little more.
