What did we eat for dinner this week? 08.19.23

No more denying it… school is back in session. Whoop? Whoop? or EEK? I suppose that our household is a little of both.



Saturday – Pulled Pork with Homemade Coleslaw, Corn and Baked Beans


My mother-in-law and father-in-law made a very tasty dinner and we had homemade ice cream for dessert.



Sunday – Grilled Chicken, Mac and Cheese along with Grilled Zucchini


It’s a good thing that I love zucchini so much and we have also reached the time of the season where I’m ready for the harvesting of it to slow down.



Monday – Philly Meatballs


Everyone but me tossed these into toasted rolls and I decided to eat them on their own with some diced grilled jalapeno for a little heat.



Tuesday – Baked Pork Chops

This is a baked freezer meal that works out great when I pull it out of the freezer the day before we want to eat it and let it chill out in the fridge until the evening we are baking it. Pretty tasty. Everyone ate them up tonight.



Wednesday – Pork Carnitas

We had some diced pork that I had gotten on sale and wanted to use up. I sliced up 3 onions and put them at the bottom of the crockpot to cook all day and then baked it in the oven before dinner to crisp it up. Here’s a link to the recipe that we really like.



Thursday – Grilled Pork along with Grilled Zucchini, Squash and Jalapenos


We have been finding those pre-seasoned pork loins on sale and they have been really coming in clutch for nights where we didn’t plan ahead. I feel like I’m still in summer mode and need to find my mojo because school literally started this week.



Friday – Homemade Pizza

The kids each picked their own toppings. One has cheese only. One has bacon, sausage and cheese and one has sausage and cheese.


My husband was super happy tonight about wanting to make homemade pizza for dinner with homemade dough. For toppings to pick from we had sausage, bacon, diced jalapenos, sliced mushrooms, mozzarella cheese and cheddar cheese. We added a little bit of italian seasoning herbs to ours.
