The theme of these first couple weeks of school is Settling into a Rhythm. I’m sure all families with kiddos jumping back into school feel this way.
Here are my favorites over the last couple weeks. There were more nights than usual where I didn’t take a picture and also more nights where I didn’t have anything specific planned so that means that dinnertime felt more stressful than I like.
Tuesday, August 22nd – Grilled Cheese

We bought a sandwich/panini press and have only used it a few times. My husband was making grilled cheese and ramen for the kiddos and I pulled out the sandwich press. The picture is pretty… but I must admit… the grilled cheese my husband made on the stovetop was better.
Wednesday, August 23rd – Beef and Broccoli with Rice

Friday, August 25th – Date Night for our Anniversary

Tonight I was able to participate in my first ever fantasy football draft and it was a blast. Huge shout out to my brother-in-law for picking my team for me and helping keep me on track. After that my husband and I snuck away for dinner that consisted of drinks and appetizers. My favorite combo.
Sunday, August 27th, Cheese and Crackers

We had a fun day at the state fair watching the oldest show his goat. Well done son! We didn’t make it home until close to six and had a late lunch so we did easy peasy for dinner.
Monday, August 28th, Fish and Chips

My husband went fishing on Saturday and made us fish and chips for dinner on Monday night. I’m not a huge fish person but it was really tasty and there were smiles all around the dinner table.
Tuesday, August 29th, Taco Tuesday!

The kids used the taco meat to make double decker tacos and I put in the meat into bell pepper boats and toasted in the over on a low broil. So tasty!
Thursday, August 31st, Buffalo Chicken Dip

We had some cooked shredded chicken in the freezer that I tossed in the instant pot at the end of the end of the day with a cup of water and a couple tablespoons of ranch seasoning mix to add a little flavor. The kids had quesadillas (still their current favorite) and I used the rest to make buffalo chicken dip.
