What did we eat for dinner this week? 09.17.23

Yay for fall time and cooler days headed our way! We are celebrating jumping into fall by starting this weekend with two big crockpots of green chili. This will be perfect to freeze in smaller batches for cold winter nights that deserve a smothered burrito.

My husband and I head to Las Vegas later this week to celebrate my niece turning 21 earlier in the year and visit my sister-in-law and brother-in-law.



Saturday Green Chile and Beef/Bean Burritos


Click here for my favorite green chile recipe. We made beef and bean burritos to have with them that the kids had by themselves without the chili.

Settle it for me! Chile or Chili?!?! My thinking is that if it is the little green chopped and diced goodness by themselves then it is green chile. If it is mixed with all the goodness that ends in the glory of smothering a burrito then it is green chili like we would spell it for red chili.

I’m 100% confident that we had dinner because I don’t skip meals and the kids definitely don’t!



Wednesday – Carnitas with Chips and Queso from Sunday Night Football


These are so tasty. It’s great to have dinner that can be mostly handled in the crockpot and then taken to the next level with the slow cooking in the oven to finish it up. Click here for the recipe.


Thursday Morning – Breakfast in Vegas Bright and Early


We had a 6:45 flight to Vegas this morning and my brother-in-law met us at the airport and took us to an absolutory wonderful breakfast at Bagelmania. So good!

Toasted everything bagel with
jalapeno cream cheese


Bagel “skins” served with ranch dressing and sour cream.


We spent the day at the sportsbook and they bet on horses and got their initial bets for the football weekend planned. When we got back to their house we had a tasty snack of different dips and crackers/chips.



Thursday Dinner – Crunchwrap Casserole

Friday “Breakfast”

I had a buffalo chicken wrap that quite honestly was so delicious that I have no other words to describe it.
My sister-in-law had “sliders” that were huge and so good with crispy fries.
My husband had steak nachos that were also very tasty! Wins all around.


Friday Dinner – Mark had Bar Food on the “Secret Menu”


Saturday – Birthday Celebration Lunch for my Niece

Combo appy along with street corn. All really good.
My husband got a burger with shrimp on it but the fries and dipping sauce won the show over the burger.
One huge margarita with my Dad and Niece in the background. ❤

We went to Senior Frogs for lunch and it was really good. Fun atmosphere and tasty food with great company can’t go wrong. Love you so much Boop. To the moon and back.
