Ingredients:
1 pound frozen shredded chicken
1 can chili beans
1 can rotel
2 tablespoons taco seasoning
2 cans chicken broth
2 tablespoons ranch dressing mix
8 oz velveeta
8 oz cream cheese
Go ahead and toss everything into the crockpot. We made this on Sunday after church when I knew I would be around for the afternoon and could stir from time to time. If that wasn’t the case, then I would cut up the velvetta and cream cheese into smaller cubes. Since we were using cooked chicken, we did this on low for 5ish hours and it was perfect.
Thawed uncooked chicken or frozen uncooked chicken would be great too. You would just want to make sure it had a longer cook time. In that case I would toss everything in at the start of the day.
