What did we eat for dinner this week? Week of 10.09.23

Hello! It feels hard to believe, but we are rounding the corner of a year of WDWE for dinner posts! My first one was in October 2022. It took me a bit to get my arms around the posting because this platform has different post formatting than blogspot, but it feels like things are clicking along now.

If only… I had more time to sit and think about and write about food. I’ll work on that. 🙂


(Side Note: I’ve decided to switch up the timing of my posts to be Monday through Sunday versus Saturday/Sunday through Friday. The dating feels wonky when I fall behind and Monday through Sunday feels more natural. When I initially started doing the weekly WDWE posts, I would do most of my writing early on Saturday mornings so I would post about the week before and couldn’t yet post about our weekend eats. It is more random now when I’m able to find time to post, so that doesn’t really apply anymore.)




Monday – Grilled Hamburgers


Funny story… my daughter was flipping through a few of the WDWE posts and said “Man. We eat a lot of hamburgers.” I nearly spit out my coffee… because she’s right. I feel like we’ve had more hamburgers since our Yellowstone trip at the beginning of the summer than we did the previous 5 years combined.

On this particular day, we had jalapeno popper hamburgers with cheese and jalapenos in them. They were very good! If my husband has read this far… I really like hamburgers. 🙂 The kids had hotdogs because they love hotdogs!



Tuesday – CHILI!


Whoohoo to our first chili of the season. It was a cold day and perfect for it. My husband headed out of town for elk hunting and I’ve decided to so lots of soups/stews while he’s gone.

Our youngest really likes to help in the kitchen and the great thing about chili is there are several things to pour into the instant pot. Usually, I like to make it in the crockpot but I didn’t decide to make this until grabbing the kids after work and the wind being so cold and nasty.



Wednesday – Ham, Corn and Potato Chowder


This dinner came to be because I opened up the freezer knowing that I wanted to make soup but not sure what I wanted to make. We were running a few minutes behind this morning and I needed to do something that would come together quick. This did!

I had some frozen diced ham to use up, a couple packages of corn we froze from a local stand last year and about half a bag of frozen hashbrowns. Here’s a link to a similar soup in the past.

I’m going to try and type this one up too because it was soooo easy to throw together and delicious.



Thursday – Beef Stew

This is our littlest kiddo’s plate and she wanted all of the sides. 🙂


We had some cornbread left from our chili earlier this week and it went together wonderfully.



Friday – Misc?

This was a weird day. The oldest got his wisdom teeth out in the morning and was still doing just soft and cold things for dinner. He didn’t really want to eat much for dinner and the girls had ramen and grilled cheese because it makes their hearts happy. I had the last of our zucchini/squash to eat up before they went bad and made some cheese sauce for a quick nachos.



Saturday – Meatloaf and Mashed Potatoes with Gravy


This was also the day the ladies all snuck away to watch the Taylor Swift “concert” at Cinemark. It was really good but also a little long for our nearly 4 year old. I made the mashed potatoes and gravy before the show so that Connor could have them while we were gone, if he wanted. I even got the meatloaf ready and in the fridge so I had to do was toss it in the oven when we got home and it was perfect timing to eat around 6pm.

These are snacks for the car ride to Taylor Swift. It was decided a few crackers needed to be added too.


Sunday – Chicken Taco Soup


We are still hitting soup hard in this house and this soup is one of my favorites! I love the added flavor that comes with the ranch seasoning mix. It is essentially this Creamy Taco Soup but uses chicken instead.
