What did we eat for dinner this week? 10.23.23-10.29.23

Holy moly this was a super busy week! The week ended with the start of Halloween festivities and snow on the ground. Snow still melts fast when there are warm days but it was fun to have for a bit.


Monday – Pork Chops with Green Beans and Rice


We’re getting down to the last of our freezer meals. I need to get a freezer meal making session on the books… not sure when that will be. The kids always get excited for rice so they were happy for this dinner.


TuesdayBaked Taquitos


What is better – flour or corn for your taquitos? I really like them both. Turns out my husband has strong feelings about corn being the best. Who knew? News to me but I’ll file that in my back pocket.



Wednesday – Travel Day with Yummy Food



I left bright and early for a work conference today. It was a great day for food that started with a toasted everything bagel with vegetable cream cheese at the airport.


Dinner at the welcome reception in the evening before the conference begins included a prosciutto topped mozzarella cheese with pesto and fresh herbs that was truly delicious.



Thursday – A Day Full of Meetings and Yummy Food

They also had ham and beans for dinner at home. One of my very favorites! Thank you to my husband for the picture. ❤

Lunch was pork burnt ends with two kinds of potatoes. I loved the potato salad that had lots of pickle relish and the waldorf salad with grapes and walnuts.




Friday – Wrapping up the Conference and Heading Home

The Salt Lake City airport had a nice surprise of a cesar salad with grilled chicken that included a balsamic glaze over the top.


For dinner my husband grilled a tri tip roast that had been marinated in wonderfulness. I think it was one of those from costco that we toss into the crockpot to make burritos with a lot of times and it was really good from the grill. He made some rice-a-roni to go with it and I was too exhausted from the week to even add salad to my plate. My picture doesn’t do this justice. It was really good.



Saturday – Halloween Fun Day!

The highlight of today was pumpkin carving in the afternoon. We went to a local event that shifted to being inside because of the weather but it was so crazy with with lines to booths running from multiple directions so that it didn’t shake out like the kids hoped.


For dinner we thawed some frozen green chile and had burritos with green chile.



Sunday – Grilled Steak


We laid pretty low today. The littlest kiddo has a cough that comes and goes and we’re hoping it doesn’t turn into anything more. My husband ran to the grocery store and came back with his dinner selection.
