Halloween fun and just like that… we are in November!
Monday – Spaghetti for the Kids

The kids love spaghetti and we like to see them happy dinner eaters. My husband and I aren’t huge fans. Instead of spaghetti we warmed up some green chile and made nachos.
Tuesday – Red Chili and Cinnamon Sugar Croissants

Halloween is here! I’m sure everyone else with kiddos was running around today too trying to fit in “all the things”. This was such a fun time when I was young and I pray our kiddos grow up with the same fun memories.

Seems like chili was a staple at my house on Halloween. It was something tasty and warm before heading out into the cold to go trick-or-treating.
Wednesday – Beef and Bean Burritos with Green Chile

We froze several ziplocs of green chile not long ago to help future dinnertimes be a little easier and we pulled another one out today. The kids like the beef and bean burritos with cheese and we like to smother ours with green chile. Sometimes I’ll also dice up tomatoes to add to the lettuce but I really do the lettuce because I like the cold and hot combination. After spicy bite of chile, it helps to take a bite of something cool.
Thursday – Big Mac Sliders

These are so good and it’s all in the sauce and toasted bread for me. My side was roasted brussel sprouts and I tried to zoom in so you didn’t have to see them… just in case you don’t like them. These sliders are awesome! Here’s a link to the recipe if you want to try them.
Friday – Grilled Pork Loin

There’s a lot going on with this plate and I felt like I was starving tonight! My husband grilled a pork loin and with it we also had mac and cheese to make the kids happy (and it sure did!) I had more brussel sprouts along with some spinach dip that I made a ton of for a baby gender reveal tomorrow morning.
Saturday – Happy Gender Reveal Day!

We have a little nephew joining our family soon. Yay!
Sunday – Chili’s After Church and Super Easy Dinner

We went to Chili’s after church. The kids picked from a few options but what sells them is the chips and salsa. I don’t blame them… I feel the same way and love to get their soup and salad. I went with the chili and salad today. Such a winner.

Mark and I weren’t hungry at dinnertime and did a lunchable style dinner for the girls. They were both pleased – especially the littlest. I think because it feels like snacks for dinner.
