Oh my goodness! I just found this post in my drafts and realized I never actually published it. It was during the transition of my post timing shift and I thought I had already posted it. There were too many tasty things not to share… even though it’s late. Be sure to read to the bottom for the suggested ending from our middle kiddo today. 🙂

Now for the post:
The week started in the mountains seeing beautiful fall colors on the trees and ended getting our ducks in a row to head out antelope hunting. YAY! October is here.



Saturday – Carne Asada Steak Nachos

Yep. More deliciousness from the mountains! We made some carne asada steak and did “all the fixins” for some nachos. I did the cheese sauce, steak, tomatoes, green onions, salsa, quac and lettuce. I loved every bite!



Sunday – Chicken Cordon Blue Pasta


Made it home down the mountain today and my husband was looking for ideas for us to make and for him to take elk hunting a little bit down the road. We made an extra big batch of this and froze two big pans of it and made a smaller one for us to have for dinner this evening.

Monday – Leftovers



Tuesday – Papa Murphys


I’m a sucker for Papa Murphy’s $10 deals on Tuesdays and was super excited to see they had their pumpkin shaped pepperoni pizza out for the holidays. I also got the cowboy pizza and added green chiles to it.


Wednesday – Leftovers

The kids loved the pasta from a couple nights ago and I had leftovers from the weekend that I was excited to eat up. It was a win win.



Thursday – Taco Boats with Nacho Sauce



Friday – Pizza and Salad


Yay! We arrived in Fowler for antelope hunting. We had pizza from the smoker and I added some of our new chiles from the season to the top of it. (Spicy and Delicious!) The salad is topped with fresh tomatoes. They were really good too.



My middle daughter reads my blog posts from time to time and she suggested that I should mix up how I end my posts rather than pretty much saying the same thing.
