This was a busy week and little planning went into several of the meals… but hey! That’s real life. I’ve noticed over the last month or so that dinnertime has felt more difficult without having many frozen meals to lean on as I’m used to. I usually like to use a few freezer meals during the workweek to make evening time easier.
(Back story… I started this post on the weekend of November 18th and then things got busy with Thanksgiving and then I ended up sick. This has been the sickest I can remember being and it has definitely been the longest that I can remember. Today is December 10th and I’m hopeful that I’m finally turning the corner. Fingers crossed!)
Monday – Chili
Our kiddo’s birthday meal request. She loves chili… it’s true. I didn’t even get a picture taken.
Tuesday – Leftovers
We had a bunch of leftovers from the weekend and took advantage of them for dinner.
Wednesday – Grilled Chicken Thighs

I was late getting home from work again today and my husband had grilled some chicken thighs. Everyone else had already eaten and I’m not sure what they had with theirs but the diced up grilled jalapeno was perfect with mine.
Thursday – Taco Meat

I tossed the taco meat onto pepper slices and baked them for a little bit. The kids did double decker tacos and my husband had regular tacos.
Friday – Layered Enchilada Bake

We had some frozen chicken in the freezer just begging to be used. I cooked it during the day in the crockpot and made a layered enchilada bake with green enchilada sauce and extra green chiles. The kiddos used the shredded chicken to make quesadillas, which is our middle daughter’s favorite thing to make these days.
Saturday – Thanksgiving Dinner

We hosted a Thanksgiving dinner at our house with all the fixings. My husband deep fried the turkey and it was amazing! My middle kiddo when to town on the pumpkin pie!
Sunday – Grilled Steak and Veggies

We had beef rice-a-roni with it and it was deliciously creamy and tasty. We haven’t had it in a while and I forgot how much I like it as a quick side.
