What did we eat for dinner these weeks? 11.20.23-12.03.23

The past three weeks have been a blur of Thanksgiving week and being sick so it seemed easiest to group a couple weeks together. Here’s the good stuff and thank you to my husband for carrying so much of the household weight over the last couple weeks and thank goodness to the freezer meals that I finally made because we needed them!


Monday, November 20th – Beef Stew


Whoohoo for stew! Only a few of us like peas, so I usually make the stew without them and then people that like them can add them. This was our littlest kiddo’s dinner.



Tuesday, November 21st – Cheeseburgers



Wednesday – November 22nd


I’m not sure what we had for dinner but I wanted to share a cute little Thanksgiving cake. My daughter was having a Thanksgiving program at preschool and we were taking a dessert. She said she wanted to take cake… I suggested maybe a pie since it was Thanksgiving but she was all in on a cake and was super excited for fall sprinkles.



Thursday – Thanksgiving Dinner


We had an early Thanksgiving dinner and then my husband, son, Father-in-law and Sister-in-law headed out for elk hunting. No luck… but it sounds like mostly good memories were made. 😉



Saturday, November 25th – Green Chile Soup


I was starting to not feel well and thought making one of my favorite soups might be just the comfort food I needed. Our littlest used it like a dip with chips and my middle kiddo made a grilled cheese to eat with it. My husband and son were elk hunting so it was a day of “just the girls”.

I threw this in the crockpot during the day while working on freezer meals. I finally made the time for freezer meals! Unfortunately, I think I pushed myself too hard when I was already starting to not feel well and started getting worse as the day wrapped up. 



Sunday, November 26th – Philly Meatball Subs


The elk hunters came home today and this was simmering in the crockpot for diner. The toasty rolls with garlic powder really make this a tasty dinner.



Tuesday, November 28th – Carnitas


This is soooo good! My husband found some avocados at the grocery store that were amazing for this time of year. Rather than making guacamole we sliced them up to add in. So good!



Thursday, November 30th – Ham and Cheese Sliders with Chile Rellanos


Thank goodness for a husband that not only likes to cook but likes good food. I was still sick and didn’t eat much but what I ate was really good. Little sliders are usually a hit with the kids because they are cute and fun to eat.



Saturday, December 2nd – BBQ Ribs


My husband used a different combination of seasoning for each rack and they were really good. 



Sunday, December 3rd – Cheesy Sausage Pasta


This cheesy sausage pasta is comfort food to its core. As I’m typing… I’m realizing that I don’t link recipes as much as I used to, but this is one that must to linked! Click here for the recipe. :)

Not sure how it’s possible… but that link is from 2017. Times flies when you’re having fun and talking (writing) about food.
