As a I sit here getting ready to type… it’s so hard to believe that today is Christmas Eve’s Eve. That’s right! Christmas Eve is tomorrow. We have lots of presents to wrap and cookies to make! It’s going to be lots of fun with lots of memories made. Merry Christmas Everyone! <3
Monday, December 4th – Ham and Potato Soup

I was still working from home and not feeling well on the day that I tossed this soup into the crockpot. It was so very good and I did a few things different but I wasn’t up to typing it out as I did it so it is lost in recipe space… maybe one day I’ll be able to recreate it.
Wednesday, December 6th – Queso Chicken Tacos

These are chicken tacos with a twist. The store bought queso is so tasty on top and this time I put my lettuce at the bottom of the taco to help it not get all soggy and break. Worked like a charm.
Thursday, December 7th – Beef Stroganoff Over Rice

This is one of those meals that tastes so very much better than it looks. A lot of times we do this over egg noodles but the kiddos love rice and today seemed like a good rice day. YAY for having freezer meals again for quick and easy dinners.
