Our littlest is still sleeping on this quiet Saturday morning while I type, so my mind likes to keep thinking and dreaming about food. I love mornings with the Christmas tree all lit up and pretty in the background. Yay for Christmas!
Monday, December 11th – Chicken Tortilla Soup

I love soup and tortilla soup is one of my favorites. This tortilla soup is especially nice because it doesn’t feel super heavy. Here’s a couple links to tortilla soup recipes that I like. They aren’t quite the same as the one I made on this day but they are also very good. Tortilla Soup 1 and Tortilla Soup 2.
Wednesday, December 13th – Beef Taco Salad or Beef Quesadillas

Thursday, December 14th – Chili with Stew Meat

Chili is one of my very favorite dinners and I’m so glad that my kiddos love it too. It feels extra special when we make it with stew meat. I remember being so hungry on this night so I was hoping that meant that I was finally going to be on the mend.
Friday, December 15th – Chicken Enchiladas and Vermicelli with Jalapeno Poppers

This was Friday night arriving at my husband’s parent’s house for a Christmas weekend celebration. My Mother-in-Law makes the most delicious chicken enchiladas and my Father-in-Law knows the way to my heart includes bacon wrapped jalapenos poppers. Such a delicious meal!!
Saturday, December 16th – Smoked Chicken and Ham

I had to sneak a picture of the chicken going on the smoker because they looked so cute sitting there on their little stands. They were so good! The broccoli rice was extra creamy and delicious. Such a wonderful meal.
Our littlest is no longer sleeping and is all over the place this morning (and it just hit 7am.) It feels like it’s going to be a wild day. Thanks for stopping by. Hope you have a wonderful day.
