Monday, Chicken Fajita Wraps

This is another freezer meal that takes what could be chicken tacos or something similar and takes it to the next level by crisping up the tortilla in the air fryer.
Tuesday, Taquitos

Our littlest came down with pneumonia and we didn’t have anything planned for dinner. The kids had quesadillas with some chicken from last night and I turned to the freezer and toasted up some premade taquitos. I love green enchilada sauce and warmed it up in the oven with some shredded cheese while the taquitos were in the oven.
Wednesday, Buffalo Chicken Tater Tot Nachos

We did some tater tot nachos for dinner using a rotisserie chicken. I added some buffalo sauce to mine. I messed up and overcooked the tater tots and had to restart them. I like mine extra crispy so I didn’t mind. :)
Thursday, Steaks

The oldest had a friend staying the night and they all agreed steaks sounded good for dinner so we thawed some out. When we got back from our Christmas celebration this last weekend, we did a run to King Soopers to take advantage of their prime rib sale. We like to buy a couple and slice them up for ribeye steaks during the year. Getting a good deal is good for the soul and makes things taste even better! :)
Friday, Hotdogs and Brats

Our middle daughter had a friend hanging out today and she stayed for dinner after hearing we were having hotdogs. The kids all ate really good. Our local grocery store has these homemade brats that my husband and I really like.
Does anyone else like putting pork and beans on potato chips like a dip? I absolutely love it and it takes me back to being a little girl.
Saturday, Mississippi Roast Beef Sandwiches
These are so good! Here’s my version. I’m only using 1/2 stick of butter and we added onions to the slow cooker too.
