Christmas Eve

Our Christmas Eve was full of wrapping presents and baking this year. My husband was a rockstar when I was sick and made cookies to share with the neighbors but I’m feeling better and was feeling the baking itch.

Christmas Cranberry Cake

The girls and I love this dessert for Christmas. It is so moist and delicious. Here’s a link to the recipe if you are itching to try it (and you totally should!)

One of my first purchases when I moved out of my parents house was a hand mixer that was on sale at Walmart for around $10. I won’t give the number… but it’s a few years old and has had a good run. On this Christmas Eve morning… it decided that enough was enough and stopped working. We NEEDED to make Christmas Cranberry Cake and my husband and son went on a mission to get us a kitchen aid. I LOVE IT so much and I’m so thankful for the two of them.

We used the extra meat from last night to make “egg rolls” and also thawed out some green chiles to make chile rellenos. Here’s a link to the chile rellenos. The philly cheesesteak ones are the same idea and timing as the chile rellenos using the beef from last night, cheese and some green chiles. 

I love my new kitchen aid so much that I made another batch of the pumpkin chocolate chip mini loaves recipe to play with the temp and timing

Not sure how the stars aligned… but I was able to write this post from start to finish in one sitting. That is a rare occurrence these days and a relished one.
