What did we eat for dinner this week? 12.26.23-12.30.23

This is the sweet spot between Christmas and New Year when we don’t know what day of the week it is. Some people don’t seem to love it but I do! 

I love that this week gives an overall vibe of less pressure and is more relaxed. Even tackling “to do” lists tends to be at a leisurely pace and a little more fun.


Tuesday, Meat and Cheese with Jalapeno Poppers


Christmas season just isn’t complete for me until we have some sliced up meat and cheese with stone ground mustard from one of those cheesy boxed gift sets. 



Wednesday, a twist on Traditional Pozole


I’m happy with how this turned out and ended up with a couple extra quart size bags for lunches to pop in the freezer. The kids weren’t excited about it and I made them mac and cheese with hotdogs which they were excited about. Here’s a link to how I made this.



Friday – Steak Fajitas


Our middle kiddo likes to put the food on the table and make our plates there instead of in the kitchen and then taking our plates to the table. This seemed like the perfect meal to do that! While she loves doing this… she comments at some point during setting and clearing the table about how much work it is… lol.

Some of our fun sprinkled in this week: snuggling baby goats, breakfast out before haircuts, decorating ugly sweater cookies (yay for 50% off the premade cookie kits after Christmas!), flipping through lots of cookbooks, funny pictures with snapchat (yes… I finally signed up), and cakepops for the kiddos while I sipped the most delicious iced latte and let Target tell me what we needed.
