I’m typing this on a quiet Sunday morning and it is already the 28th of January! 

I had hoped to sleep in today but sometimes the stars don’t align. Our dog likes to go outside around 4:30 each morning and it can be a struggle to fall back asleep once I let him out. Anyone have any tips or tricks?  

Sunday – Sausage Queso and Grilled Shrimp

This was New Years Eve. My husband took our girls to his parents’ house on this morning. We are blessed that they could care for them while we worked this week. They both have so much fun and were so excited to go that they had been mostly packed for a few days.

I stayed home and got to spend the day scrapbooking. For this day and the next I tried to focus on bucket filling things knowing that the rest of January was going to require a lot of energy to complete all the tasks needing to be completed.

Wednesday – Salad and Green Chile

Sometimes life calls for green chile and this was one of those days. When the kids are here, we would make this with burritos because they would have the burritos and no chile. For today I had green chile with chips and salad.

Thursday – Sheet Pan Quesadillas

We had this for the first time at my sister-in-law’s when we visited in September and I’m finally making them at home. They are so good! The kids didn’t love them as much as I thought they might. These can be made with an endless number of flavor combinations and I’m wondering if they might like chicken better. 

Friday – Brats and Salad

I bought a light box to take pictures of food that came this week. As my son is on the second half of his sophomore year, we are getting closer to the time where I will be giving him the cookbook of his favorite recipes. I thought it would be fun to remake a lot of them with fresh pictures. Well… the lighting seemed like it actually turned out better on my countertops than in this box. I played with the setting options and tried positioning the camera different ways for different meals and didn’t have any luck.
