So many times my recipes are all about fast and easy. This recipe isn’t fast but it’s pretty easy and super delicious! It feels like a win when the ingredients are ones that usually are on hand.

Ingredients:
3 lbs russet potatoes, scrubbed clean and sliced thinly
3 tablespoons butter
3 tablespoons flour
3 cups 2% milk
1 1/2 cups cheddar cheese
Salt and pepper to taste
Preheat oven to 400
Melt the butter on the stovetop over medium heat and then gently add the flour making the roux. Stir in the milk and let come to a simmer. Then add the cheese and let simmer together under everything is nice and melty.
Clean the potatoes and thinly slice them about the same thickness so they will all cook the same amount of time.
Layer into a 9×13 as follows: spray with pam, 1/2 the sliced potatoes, 1/2 the sauce, rest of the potatoes and the rest of the sauce.

Cover with foil and bake for around 60 minutes. A knife should gently go in and out of the potatoes when they are done.
