What did we eat for dinner this week? 02.17.24

The Super Bowl was a wild ride between the 49ers and the Chiefs. I had grand plans of recipes that I wanted to make and wasn’t feeling the best so we ended up taking help from the freezer department. The kids seemed just as happy and less overall work. Win. Win.



Sunday – Super Bowl Snacks for Dinner

Most of this was part of the Costco appetizer party tray from the freezer department.
Onion rings, jalapeno poppers balls, mac and cheese balls and wrapped little smokies.


Mozzarella sticks. These are currently the favorite of our middle kiddo.




Monday – Buffalo Chicken Wrap


I love buffalo chicken and cooked chicken yesterday for the Super Bowl to make a buffalo chicken dip that didn’t end up coming together. Having the chicken already cooked made for a quick and easy dinner tonight.





Wednesday – Baked Shrimp


Ash Wednesday is already here! It feels so early this year and it’s hard to believe that Easter is going to be in March this year. My husband also sautéed a couple pounds of shrimp that he and the oldest son went to town on. I like the crunchiness of the breaded shrimp and really like the power of creating my own cocktail sauce. It’s definitely more horseradish than ketchup and it was divine.



Thursday – Grilled Chicken


Here’s my daughter’s plate. We had grilled chicken thighs with homemade french fries and corn.



Friday – Tempura Shrimp with Mozz Sticks


The kids were given a choice and when given a choice… ramen and grilled cheese seems to be a high ranking favorite.



Saturday

We went out to lunch after our middle kiddo’s basketball game with my parents and weren’t super hungry at dinnertime. We had some snacky things… but didn’t have a big meal.
