What did we eat for dinner this week? 02.24.24

This is the last week that our middle kiddo has basketball and I’m kindof bummed. Their team has had a great season. Onto swimming lessons and volleyball will also be headed our way.

It was nice out this weekend so I was feeling spring vibes and did a little spring cleaning. Well… I guess you can call it that. More like tackling some organizing projects that I’ve wanted to for a while and feeling good about how they are done.




Sunday – Grilled Ribs, Cheesy Potatoes and Green Beans




Monday – Pizza Pasta


We had a pizza pasta frozen meal that I tossed in the crockpot. My husband wasn’t very excited about that, so while they were at basketball practice a made something a little different for us. Haley wanted a ton of “shaker cheese” on her pasta.

The pizza pasta sauce is similar to a regular spaghetti sauce with a twist of sausage instead of hamburger but it is the chopped up pepperoni that really makes it super tasty to me.


My husband and I had sausage sauteed with veggies and we had some mushrooms that I’ve been meaning to use and wanted to make stuffed mushrooms with.



Tuesday – Carnitas

I LOVE this carnitas recipe that leans on the cooking in the slow cooker during the day and then gets crispy in the oven. Click here for the recipe we use.

Thursday – Dinner at a Work Event

These creamy potatoes stole the show and were amazing!

My husband and kids had pizza boats (sorry… no picture.) When we made pizza pasta the other night, I didn’t mix all of the sauce with the pasta and saved some of it on the side so that we could toast some garlic bread, add the sauce and then some cheese and toast it all together. We’ll have to have it again soon… it is so tasty.



Friday – Cod in the Air Fryer and Salad

My husband made his into tacos. Some with salsa and one with tarter sauce


Tossing together my own tarter sauce is so easy and I love extra pickle relish, so I always add extra of that. If you want to give it a go – try to start with equal parts of mayo and dill pickle relish and then adjust until your heart is content.



Saturday – Dinner at a Basketball Event


We went to a basketball game at UNC and dinner was included. They also had a couple different pasta options but I didn’t have any. Everyone else had some pasta and liked it. The skewers were tasty. The one with an olive and fresh mozzarella makes me think of maybe something to play with as a side for Easter dinner.

They were tied at halftime and unfortunately lost in the end. It was super fun to watch and I was impressed by the ball handling skills.
