Chicken Cordon Blue Pasta

This is a spin on the chicken cordon blue casserole that helps to stretch the meal and is just as tasty.

Preheat the oven to 350

Bring a pot of water to boil as you start the sauce

This sauce takes a little time and attention but it is worth it in the end:
3 tablespoons butter, melt in a large skillet on medium
3 tablespoons flour, whisk into the butter for 1 minute
3 cups milk, add to the butter/flour mixture and whisk until thickened (usually in a couple minutes)
add salt and pepper to taste
add in 1 teaspoon dijon mustard

The rest of the components:
1 lb cooked pasta
3 cups chicken, cooked and diced
2 cups ham, cooked and diced 
2 cups cheddar cheese, shredded
Diced green chiles, optional

Bake covered for 35-40 minutes (remove the foil for the last 10 minutes)

On this day – we made a double batch so my husband could take some elk hunting. It makes a lot, so we ended up with three big pans.
