The past couple months have been a blur! For this post I’m going to share a few highlights of what we ate in May as the weather is starting to turn warm and summer is upon us.
There are several recipes that I’ve been collecting pictures of and hope to share soon. I really enjoy trying new recipes and they are especially wonderful when our family is a fan of how they turn out.

Pork, Veggie and Pineapple Kabobs


YAY! I love kabobs and we had them for Mother’s Day.
Lightened Version of Buffalo Chip Dip with Veggies and Tortilla Chips

We did a couple things to lighten up the dip. The chicken was cooked in the instant pot with some chicken broth. After taking out the chicken to shred it we used some of cooking liquid with ranch dressing mix versus prepared ranch dressing to get the ranch flavor and moisture with less calories.
I’m a big fan of buffalo wing sauce so it would be hard for it to go wrong for me. 🙂
Hamburgers, Hotdogs and Black Bean Burgers while Camping

I’m having a black bean burger with no bun. I actually really like them… although my family isn’t a big fan.
Gotta have Smores

My husband bought some caramel stuffed and chocolate stuffed marshmallows for roasting along with the traditional ones. The caramel ones were a big hit!
