Low Carb Green Chile “Bread”

A few weeks ago we tried a recipe for low carb bread that used a combination of eggs and cottage cheese. This is a very similar recipe that adds in green chiles for flavor but it could just as easily be left out.


Ingredients:
4 eggs
1/2 cups lowfat cottage cheese
1/2 shredded cheddar cheese
1/3 cup diced green chiles

Preheat over to 425

Use a blender for the eggs and cottage cheese and blend until smooth. Stir in the green chiles. Pour into a 9×13 baking dish sprayed with pam so it will come out easily and top with cheese.


Bake for 30-35 minutes



I ate it by itself and really liked it. It’s thick enough that it seems like it could be a higher protein bread substitute with the green chile adding a pop of flavor.
