Roasted Boursin Grape Tomatoes and Chicken Pasta

Recipes similar to this one were blowing up my feed on insta. I like boursin cheese and wanted to give the recipe a try. Something about the garlic and herbs along with the roasted grape tomatoes was very enticing. The recipe looked decadent without taking a ton of effort, so it seemed perfect for a weeknight and it was.


Let’s Get Crafty!

Ingredients:
3 cups cooked and shredded chicken
2 cups of cherry tomatoes
5oz round boursin garlic and herbs cheese
1/4 cup EVOO (this is an estimate… I didn’t specifically measure)
1/2 pound of cooked pasta of your choice (I made half a box because I was going to make some with cooked pasta and some without for a lower calorie option)
Fresh cracked pepper (amount unknown… this comes from your heart)

Optional Ingredients:
2 cups fresh spinach
5-6 cloves of fresh garlic


Preheat oven to 425

Toss the grape tomatoes and EVOO into a 9×13 baking dish and add fresh cracked pepper. I then stirred it up so the tomatoes were evenly coated with EVOO. (If you’re adding in fresh garlic – add it now so it is part of the roasting party.) Make a spot in the middle to add in the cheese round. Once the oven is preheated, roast for 20 minutes until your tomatoes are bursting with happiness and the cheese is soft and toasted

While this is roasting, get some water boiling and cook your pasta of choice according to the package. (Be sure to save some of the pasta water before draining. I would save a couple cups but you probably won’t need all of it.)


Once you take it out of the oven, smash the tomatoes and combine with the cheese. It will look so creamy and smell amazing! (I want to try it with the extra garlic next time.)



Add in the cooked chicken and combine with some of the pasta water to help loosen it up some. I started with 1/2 cup and then added a little more.



I split the chicken, tomatoes and cheese in half so that I could have some without pasta and then added the cooked pasta to the other half with a little more pasta water. (This is where you could add in the fresh spinach.)



This was really good! I want to try it again with the addition of roasted garlic. I’ve also seen variations without the chicken for a meat free meal. You probably wouldn’t add as much pasta water without the cooked, shredded chicken.
