Zucchini Waffles

We pulled our first zucchini out of the garden and I’ve been looking forward to giving zucchini waffles a try. I changed up the recipes that I’ve been seeing by removing the panko/breadcrumbs and adding another egg and more cheese.

Let’s Get Crafty!

Ingredients:
1 1/2 cups zucchini (grated or diced super small)
2 large eggs
1/2 cup shredded medium cheddar cheese
1/4 teaspoon garlic powder
Dash of salt and pepper

Plug in your waffle iron to start the preheating process and combine all ingredients in a bowl and mix well.

I ran the zucchini through a chopper that cuts the pieces really small rather than grating it and I didn’t remove any moisture. It worked great in the mini dash and I loved the way the cheese got nice and crispy around the edges. When I tried the mixture in the larger more traditional sized waffle iron, there was extra liquid, so I would try grating them if I wanted to use that next time so that I could squeeze out the extra moisture.



Before adding the mixture to the waffle iron, be sure to spray with pam.

For the dash sized waffle iron, add 1/4 cup of the zucchini mixture, spread around evenly and close the lid. Check after a couple minutes and see what you think. I let mine cook a little extra because I wanted the cheese to get crispy on the edges.


This made two of the small mini dash waffles and one of the larger traditional circle waffles that has four sections. I think it would make about 8 of just the mini dash waffles.

It was so good! Highly recommend!
