Baked Taco Cups

This is a fun way to use up leftovers. We had leftover sloppy joes, taco meat and some buffalo chicken.


Let’s Get Crafty!

Ingredients:
6 large softshell tortillas (we used 1/2 tortilla in each of the muffin tins)
Filling of your choice
Cheese of your choice to sprinkle over the top


Preheat oven to 375

Spray the cupcake tins with pam before adding in the tortillas. For the sloppy joes and buffalo chicken cups we layered in the meat and then topped with cheese. For the taco cups we put refried beans at the bottom, some cheese, then taco meat and then topped with cheese.







Bake for 10 minutes and check. We did ours another 5 minutes so they would be a little extra crispy.

The kids were fans of the taco cups and I really liked the sloppy joe cups.
