Lower Carb Chicken Fajita Casserole

This recipe is so good! It did take a little extra time with sautéing the veggies beforehand but I also think that helped to bring another layer of flavor that made the extra time well worth it. I’ve seen similar recipes where that step is skipped and the veggies are added raw and people had good reviews about that too.

The pictures truly don’t do this dinner justice! It was so good.

Let’s Get Crafty!

Ingedients:
2 lbs chicken, diced into bite size pieces
Salt and pepper (sprinkled over the chicken)
4 oz low fat cream cheese, softened
1 can rotel, pureed and then extra fluid drained off
1/3 cup green chiles, diced
1 packet of fajita seasoning
1 tablespoon of butter
1/2 – 1 cup low sodium chicken broth
1 large onion, sliced
5-6 mushrooms, sliced
2 peppers of your choice, sliced (we did green and orange)
1 cup medium cheddar shredded cheese

Sauté the veggies

Start by melting butter and adding sliced onions to sauté over medium heat. Once they have softened, add in the mushrooms and sliced peppers. Jalapenos would be great here too. I didn’t add them this time because we are including green chiles in the sauce to cover the chicken.

A trick to help with using less butter during the sauté process is to start with the tablespoon of butter and then add in about 1/2 cup chicken broth at a couple different points while sauteing. This helps to make sure the veggies are fully cooked and the butter helps to get the beautiful caramelization once the liquid has cooked off. This part of the process takes about 30 minutes.



Preheat the oven to 400


Spray pam in an 8×10 baking dish and add the diced chicken. Sprinkle with salt and pepper. I used a few shakes of the pepper and maybe 1/4 teaspoon of salt.



Combine the cream cheese, pureed and drained rotel, green chiles and fajita seasoning until well combined. Then pour over the diced chicken.



Evenly spread the sauteed veggies over the top.



Top of 1 cup of medium cheddar cheese.



Bake for 35-40 minutes with the last couple minutes on a low broil to help brown the cheese.
